Spiced Pear & Elderflower Collins

Built on the classic collins structure, this long drink takes its inspiration from warming flavors of the season. Floral pear juice and St-Germain are layered over a base of cognac, lightened up with citrus, and evened out with spiced honey syrup.

The Method

  1. Combine all the ingredients, except the club soda, in a mixing tin and shake
  2. Strain into a collins glass filled with ice
  3. Top with club soda
  4. Garnish with a horse’s neck lemon peel and freshly cracked pepper
