This complex, floral and fresh cocktail pairs St-Germain with zesty grapefruit, delicate crème de violette, and sparkling wine.
- Combine all the ingredients, except the sparkling wine and lavender bitters, in a mixing tin
- Add ice and shake until chilled
- Strain into a coupe filled with ice
- Top with sparkling wine
- Add the lavender bitters
- Garnish with a lemon zest
