This complex, floral and fresh cocktail pairs St-Germain with zesty grapefruit, delicate crème de violette, and sparkling wine.

The Method

  1. Combine all the ingredients, except the sparkling wine and lavender bitters, in a mixing tin
  2. Add ice and shake until chilled
  3. Strain into a coupe filled with ice
  4. Top with sparkling wine
  5. Add the lavender bitters
  6. Garnish with a lemon zest
